A little history…

Smoothie Recipe: Pomegrante & Dates

Serves: 12 persons

Ingredients

4 cups pomegranate juice, bottled or 1000 g
300 g date paste
1 tin Nestle Sweetened Condensed Milk or 395 g
1¾ cups skimmed yoghurt or 320 g, frozen
600 g ice, crushed

Preparation

Combine all the ingredients together in a blender except the crushed ice.

Blend for 5 minutes until smooth; pour the ice and blend again for 2 minutes.

Serve in a large chilled glass.

Strawberry Liqueur!

3 1/2oz.Strawberry Qream™ 1/2oz.

Godiva Chocolate Vodka cocoa powder (optional)

 1 Strawberry (optional)

Combine Strawberry Qream™ and vodka in an ice-filled shaker. Stir well. Strain into a cocoa powder-rimmed martini glass. Garnish with a strawberry slice (optional).

Summer Jerk Chicken!

In lieu of spring break and summer seasons approaching, I decided to post a new recipe that is delicious in every way! This dish is also very healthy. It is around 210 calories with only 5 grams of fat. Hope you enjoy this dish and this nice weather!

Servings: 3

Serving Size: 1 chicken breast

Calories: 210
Fat: 5 g
Carbs: 2 g
Fiber: 1 g
Protein: 24 g
Here are your ingredients:
3 boneless chicken breasts
2 limes, juiced
1/2 cup of water
1 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. brown sugar
1 tsp. dried thyme
1/2 tsp. ground ginger
1 tsp. ground black pepper
2 Tbsp. vegetable oil
1 onion, chopped
1/2 cup of green onions, chopped
3 cloves garlic, minced
1 habanero pepper, chopped
1/2 cup of pineapple juice
Placed chicken in a medium bowl.  Cover with lime juice, pineapple juice and water.  Set aside.  In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil.  Blend well, then mix in onions, green onions, garlic and habanero pepper until almost smooth.  Pour over chicken mixture and let marinade for a minimum of 2 hours in the refrigerator.
 
Preheat oven to 400 degrees F.  Place the marinated chicken with juices into a baking dish and cover.  Bake for 35 to 40 minuntes and garnish with a lime.

Spring Read!

For Esme With Love & Squalor

 

I stumbled across a list of wonderful short stories that are so beautiful. One that everyone kept commenting on was called “For Esme With love and Squalor. The story is about a soldier who befriends a young girl in England before heading off to D-Day. They keep in touch even as time grinds on and both lose much of the innocence they had on first meeting in a cafe, when after the little girl leaves the soldier reflects. It is a truly moving story that I encourage everyone to read! Maybe even over spring break, while resting on the beach!
